The Best Vegan Carrot Cake Cookies Ever

I am not going to bore you with a long blog post, it is pretty simple, these cookies are amazing, you should make them. Easy ingredients, and they take around 10 minutes to make (plus 30 mins chilling and 20 mins baking)

Ingredients

(makes around 8 cookies)

  • 3/4 cup of wholemeal or plain flour

  • 1 cup of oats

  • 1 1/2 teaspoon baking powder

  • 1 1/2 teaspoon ground cinnamon

  • a dash of himalayan salt

  • 2 tablespoon melted coconut oil

  • 1 flax egg (mix 1 tablespoon ground flaxseed with 3 tablespoon water, mix and leave in fridge for 15mins)

  • 1 teaspoon vanilla extract

  • 3/4 cup pure maple syrup

  • 3/4 cup grated carrot

Instructions

  • In a big bowl mix together the oats, flour, baking powder, cinnamon, and salt.

  • In a separate bowl mix together the melted coconut oil, flax egg and vanilla. Stir together before adding the maple syrup.

  • Add the two mixtures together and stir in, then add the carrots and combine it all together.

  • Chill in the fridge for 30 minutes.

  • Place a cookie sized portion on your baking tray until all the mixture is used up and bake in the oven at 165 celcius (325 f) for around 16-18 minutes.

  • Let them cool slightly before eating (when they are warm they are divine)

  • Keep in a sealed container until finished.
